Yummiest Banana Pancakes (gluten & sweetener free!)

Oh my goodness. You have to make these! Sooooo good. And so easy, healthy and satisfying. Banana Pancakes. Oh, and they are completely D-friendly too—with no sugar! Only 4 ingredients.

I just made one of these for breakfast for the first time this morning and it is definitely a recipe I am waiting for my next banana to brown to make again. Here’s what’s in it: 1 brown banana, 2 eggs, a pinch of salt and 1/2 teaspoon vanilla. I cooked it in a little bit of coconut oil.

I will give you the link to the original recipe by The Primalist to follow their instructions. Here’s what I did. I added 2 eggs to a bowl of warm water for 5 minutes to warm and then mixed all of the ingredients in my stand mixer. I set the electric stove to a temp of low-medium (8:00) and it was ready to turn at 7 minutes then heated it a few minutes longer on the other side, turning the heat down a little lower to the 9:00 position. I left the lid on while cooking. Before eating I added a little butter, a sprinkling of cinnamon and some real maple syrup. Yum!

These are definitely a great use for brown bananas and couldn’t be any simpler to make. I hope you enjoy!

No-Bake Chocolate Drop Cookies

No-bake chocolate drop cookies. Yum! I woke up thinking about this recipe one morning this past week. I knew I had to make them and share the recipe here. They are so simple and quick to make and filled with nutritious ingredients.

I grew up eating these cookies and they were always a favorite of mine. In college I asked my mom for the recipe so I could make and enjoy them at my apartment. Cutting down the sugar by half, I would happily devour them with a glass of milk as my breakfast or a snack before heading to class.

It has been close to 3 months now that I have been under the weather after coming down with the flu/upper respiratory type infection which led into pneumonia and finally last month a car accident on our wedding anniversary the day after my potent antibiotic ended for the pneumonia.

This is seriously the best broccoli salad I have ever eaten. Hence the name ‘Best Ever Broccoli Salad!’ If you are a fan of broccoli and want a salad that combines fresh, crunchy raw broccoli with the taste of salty and sweet, this is your salad!  This salad is perfect for Labor Day or any other barbecue or family gathering. It is also great alongside any grilled meat for a quick and healthy accompaniment to a meal. Even non-broccoli lovers will be happily munching on it, asking for more. You can be assured that if you serve it, it will be the delight of many. And you may just have a few people knocking at your door asking for the recipe.

There are some days that one can feel ever so thankful for having a loving and compassionate life partner/spouse. Today is one of those days for me. I realized tonight how thankful I am for my dear husband. Without a second thought, in three ways he made decisions that would allow me to have the best date night possible – keeping my health top priority. We all know how important this is in a life with diabetes.

Easy Baked Italian Zucchini

So Friday night I was getting really hungry for dinner but feeling pretty unmotivated to make it. This happens to you too, right? I was planning to reheat some leftover gluten free pasta and spaghetti sauce I had made the night before. But I wasn’t very enthused about it because I tried a new gluten free pasta this time and was not very fond of it. Lesson learned: always stick with Tinkyada brand gluten free pasta – it tastes much better!

Just as I was about to quit wasting time and get off Facebook start making dinner, someone posted a Pinterest recipe to Facebook. I clicked on it to see what it was. It immediately intrigued me. It simply said, cut a zucchini in half, add cherry tomatoes, cheese and fresh basil and bake. There were no specifics such as oven temperature or length of time to bake. I had several zucchini on their last leg in my fridge and some tomatoes not too far from that point either. I decided to give the recipe a try and this is what I came up with!

Energy bars: delicious & diabetes-friendly!

New Note (added after original publishing): I mentioned in the original post that I would try making pumpkin maple bars in the future. I made some last night and they were a hit! They were so very good that I will definitely make them again! After posting a picture of them on Facebook last night, I had several requests for the recipe. I have updated this post to reflect the addition of Pumpkin Maple Oatmeal Bars (seen below the Banana Chocolate Almond Bar recipe!)

Hello Red Riders! How is your summer going? Did you enjoy the Tour de Cure this year? I had a blast! It could not have been a more perfect day – weather wise and everything else too. Plus we raised a lot of money to help STOP diabetes. Yay! We had 1,805 riders and so far raised more than $630,000! Woohoo! It is wonderful to see so many people come together for a great cause. And as someone living with Type 1 diabetes I sincerely appreciate each person’s hard-earned efforts helping us move closer to a cure for diabetes. It fills my heart with so much gratitude and hope. I’m already looking forward to next year! June 1, 2013 is the date. Mark your calendars!

I received a special request for this month’s recipe for the Red Rider Reader – ENERGY BARS!! I thought this was a great idea as we are out cycling and active this summer. Lightly Sweetened Peanut Butter Cookies: Just in time for the holidays!

Hello friends! Christmas is upon us! Merry Christmas and Happy Holidays to you and the ones you love! As I write, I have a beautiful fragrant Christmas tree lit up in my living room and Christmas music playing in the background. I got to thinking about Christmas cookies and wanted to share a recipe with you the way I like to bake: lightly sweetened (reduced/low sugar). Nervous if you will enjoy a cookie with not as much sweetness? Read on. If you are just stopping by for the recipe and not further information on reduced sugar baking and how I came to bake this way, scroll right to the bottom of the post.

I am not sure if it is the amount of years I have had diabetes (25 years in February, 2012) or the age I currently am, (36), but cane sugar and I are just not pals anymore. This includes white granulated sugar at the top of my list, but also powdered sugar and brown sugar.
