Lessons from Jonah #3: How to Survive Cold Snaps

by Cynthia January 24, 2013

We have been experiencing some really cold weather this winter in Minnesota. After last year’s unseasonably warm winter, it has felt very chilly. Temperatures have gone as low as -12 F and wind chills around -30 F for several days this week! (even colder in other parts of the state). Brrrr. Just when we thought it was going to warm up a little, it’s only -2 out there right now! As many of you are experiencing, this cold snap has stretched into other parts of the country including Canada.

Jonah has a lesson to share with you in all this..

No-Bake Chocolate Drop Cookies

by Cynthia January 14, 2013

No-bake chocolate drop cookies. Yum! I woke up thinking about this recipe one morning this past week. I knew I had to make them and share the recipe here. They are so simple and quick to make and filled with nutritious ingredients.

I grew up eating these cookies and they were always a favorite of mine. In college I asked my mom for the recipe so I could make and enjoy them at my apartment. Cutting down the sugar by half, I would happily devour them with a glass of milk as my breakfast or a snack before heading to class.

Best Ever Broccoli Salad!

by Cynthia September 2, 2012

This is seriously the best broccoli salad I have ever eaten. Hence the name ‘Best Ever Broccoli Salad!’ If you are a fan of broccoli and want a salad that combines fresh, crunchy raw broccoli with the taste of salty and sweet, this is your salad!  This salad is perfect for Labor Day or any other barbecue or family gathering. It is also great alongside any grilled meat for a quick and healthy accompaniment to a meal. Even non-broccoli lovers will be happily munching on it, asking for more. You can be assured that if you serve it, it will be the delight of many. And you may just have a few people knocking at your door asking for the recipe.

Easy Baked Italian Zucchini

by Cynthia August 7, 2012

So Friday night I was getting really hungry for dinner but feeling pretty unmotivated to make it. This happens to you too, right? I was planning to reheat some leftover gluten free pasta and spaghetti sauce I had made the night before. But I wasn’t very enthused about it because I tried a new gluten free pasta this time and was not very fond of it. Lesson learned: always stick with Tinkyada brand gluten free pasta – it tastes much better!

Just as I was about to quit wasting time and get off Facebook start making dinner, someone posted a Pinterest recipe to Facebook. I clicked on it to see what it was. It immediately intrigued me. It simply said, cut a zucchini in half, add cherry tomatoes, cheese and fresh basil and bake. There were no specifics such as oven temperature or length of time to bake. I had several zucchini on their last leg in my fridge and some tomatoes not too far from that point either. I decided to give the recipe a try and this is what I came up with!

Energy bars: delicious & diabetes-friendly!

by Cynthia May 7, 2012

Editor’s note: This is a guest post for the American Diabetes Association. It will be featured in the ADA Tour de Cure’s Twin Cities July Red Rider Reader.

New Note (added after original publishing): I mentioned in the original post that I would try making pumpkin maple bars in the future. I made some last night and they were a hit! They were so very good that I will definitely make them again! After posting a picture of them on Facebook last night, I had several requests for the recipe. I have updated this post to reflect the addition of Pumpkin Maple Oatmeal Bars (seen below the Banana Chocolate Almond Bar recipe!)

Hello Red Riders! How is your summer going? Did you enjoy the Tour de Cure this year? I had a blast! It could not have been a more perfect day – weather wise and everything else too. Plus we raised a lot of money to help STOP diabetes. Yay! We had 1,805 riders and so far raised more than $630,000! Woohoo! It is wonderful to see so many people come together for a great cause. And as someone living with Type 1 diabetes I sincerely appreciate each person’s hard-earned efforts helping us move closer to a cure for diabetes. It fills my heart with so much gratitude and hope. I’m already looking forward to next year! June 1, 2013 is the date. Mark your calendars!

I received a special request for this month’s recipe for the Red Rider Reader – ENERGY BARS!! I thought this was a great idea as we are out cycling and active this summer. A healthy energy bar is an ideal snack for anyone before, during or after cycling or any other exercise. Thanks for this fabulous suggestion Janeece Oatman! Janeece is the amazingly talented and passionate Associate Director for the Twin Cities & Rochester, Minnesota Tour de Cure rides.

Editor’s note: This is a guest post for the American Diabetes Association. It will be featured in the ADA Tour de Cure’s Twin Cities April Red Rider Reader.

Hey Red Riders! Happy Spring to you! I hope this finds you both happy and healthy! I am excited to be bringing you another recipe for our April Red Rider Reader! We have had nice weather early this spring – I hope you are taking advantage of it and sneaking in some early training rides!

I am excited to share this recipe I created with you. It’s ingredients are super yummy yet healthy too! It kind of reminds me of a loaded baked potato! It is also the perfect meal to eat before a training ride for the Tour de Cure or any other workout. In need of a quick, balanced meal — it can also easily be served for lunch or dinner as well.

by Cynthia February 27, 2012

Greetings! Ever wonder what goes into making a great chef? Where their passion and interest stem from? I am very much excited to share this post with you and give you a sneak peak into a key component of my health and the foundation of my well-being. Several years ago I was given the opportunity to assist a chef at his weekly cooking classes. Newly diagnosed as someone living with food allergies (gluten, corn and most nuts) and not very proficient in the kitchen, I jumped at the chance. Enter Jeff Woodward. Nationally renowned chef specializing in holistic health cooking.

Be my Valentine Flourless Chocolate Cake

by Cynthia January 25, 2012

I am excited and honored to be writing this as a guest post for the American Diabetes Association (ADA). It is a recipe for the Minnesota Red Riders riding in the 2012 ADA Tour de Cure bike ride! Welcome and GO RED RIDERS!!! Woohoo!! This will be my second year as a Red Rider and I have lived with Type 1 Diabetes for 24 years. When brainstorming recipes to include in our first Red Rider Reader, I knew right away this was the one!

It is one of my favorite dessert recipes and quickly became well-loved by family and friends. I have served it at family gatherings and events as elegant as a bridal luncheon — where my husband’s Aunt Loene once proclaimed, “This is the best flourless chocolate cake I have ever eaten!”
